Pierogies
with Italian Sausage and Peppers

8 ounces sweet Italian sausage
1 (16.9) package frozen potato & onion or potato & cheddar pierogies
2 cups thinly sliced Italian or green peppers
1 (27 oz.) jar tomato based pasta sauce (any variety)
Cut sausage in 1/2 inch pieces. In an 8x12 inch microwaveable dish, place
sausage in a single layer. Cook at high power until cooked through, about
3 minutes; remove sausage; cover and set aside. In the same dish, combine
pierogies, peppers and pasta sauce. Cover with plastic wrap, turning back
one corner; microwave mixture on high for 5 minutes; stir gently. Continue
to microwave, covered, for 5 minutes. Return sausage to dish; stir gently.
Microwave, covered, until sauce bubbles and pierogies are hot, about 2
minutes.
Range Top Directions: In a large skillet, over medium heat, cook
sausage and peppers until tender about 3 minutes. Add pierogies and pasta
sauce. Cook, covered, over medium heat, until sauce bubbles and pierogies
are hot in the center, about 10 minutes.
Yield: 4 portions.
