Strawberry & Cream Cheese French Toast Sticks

12 oz cream cheese
1/2 c. powdered sugar
8 oz. strawberries, frozen
2 Tbsp. granulated sugar
3 Tbsp. water
24 ea. frozen french toast sticks

Steps:
1 - In a saucepan, simmer the strawberries, sugar and water. Keep warm until needed.
2 - While the cream cheese is still chilled, use a melon baller to make small balls.
3 - Roll in the powdered sugar and reserve in the refrigerator.
4 - If the cream cheese balls are not entirely round, then roll them between your palms to regain shape.
5 - To prevent sticking, heat the melon baller in hot water before scooping the cream cheese.
6 - Prepare French Toast according to package directions and sprinkle lightly with powdered sugar before serving.
7 - Serve 4 French Toast sticks with 2 to 3 cream cheese balls.
8 - Drizzle with strawberries and sauce.
9 - Garnish with mint sprigs.
