Shrimp
Fajita Roll Up

2 Tbsp. vegetable oil
2/10 oz pkgs. frozen garlic & herb marinated shrimp (chopped)
2 tsp. fajita seasoning
2 Tbsp. cilantro, fresh chopped
1/2 ea. lemon (juiced)
8 ea. flour tortilla, 10"
6 oz. pepper jack cheese (grated)
6 oz. pico de gillo
1/2 ea. avocado, fresh (small diced)
8 ea. romaine leaves
16 oz. southwestern ranch dressing (served on side)
Steps
1 - In a large skillet over medium heat, add the vegetable oil.
2 - Sprinkle fajita seasoning thoroughly over shrimp and add to the heated
oil.
3 - Add the fresh cilantro and lemon, then toss. Sauté until shrimp
are pink in color.
4 - Remove mixture from the heat and begin assembling roll ups.
5 - On a flat surface, lay out 1 flour tortilla. Sprinkle surface of the
tortilla with cheese.
6 - Next, layer with shrimp, pico de gillo, avocado and lettuce.
7 - Roll and slice at an angle. Serve immediately. Garnish with additional
pico de gillo around the plate and a side of Southwestern Ranch Dressing.
